Gluten-Free “Small-Bites” with Carol Fenster! Monday, June 6, 2011 5:00-7:00 p.m. Delicious food is even more fun in small bites; perfect for entertaining or those “just-one-bite is perfect” occasions. In this first class Carol Fenster, cookbook author and gluten-free expert will demonstrate delectable savory dishes as well as decadent sweet treats. She will also show how to incorporate wholesome flours and grains with her tried-and-true gluten-free techniques, and illustrate how to turn even the simplest dish into a work of art. Some of her recipes include: Portobello Sliders, Savory Mini-Quiches (perfect as appetizers), Itty-Bitty Pavlovas, Petite French Macaroons, and more!

Gluten-Free Baking and Cooking with Beans with Carol Fenster! Tuesday, June 7, 2011 3:00-5:00 p.m. In her second class Carol’s focus will be on beans – nature’s gift to mankind; high in fiber and crucial nutrients, yet low in fat and sodium. Beans become more than everyday food when Carol elevates them to delicious savory and sweet treats when she uses bean flours and bean purees to produce dishes that delight even the most discerning palate, while discreetly delivering vital fiber and nutrients. You will learn how beans lend increased moisture and extended shelf-life to gluten-free baked goods. Some of her recipes will be: Gingerbread Cupcakes, Chocolate Brownies, (made with bean puree) Greek Lentil Salad, Savory Mediterranean Muffins, and more!

Organizing Your Gluten-Free Kitchen with Tracy Rempel! Thursday June 16, 6:00-7:00 p.m. Are you new to the gluten-free lifestyle? Or have you gone gluten-free, but still feel overwhelmed with kitchen organization? This is the class you've been waiting for! Tracy Rempel, professional organizer and owner of Work in Progress Organizing, will show you organizing techniques that will protect your health from gluten, as well as five kitchen stations necessary to make cooking a simpler process. This is a lecture only class however; further consultation is available with Tracy by appointment.

Join cookbook author and national magazine writer Chef Ivy Manning and learn some great new recipes perfect for porting to your next picnic, potluck or barbecue! We'll explore alternative flours and make delicious vegan Spelt* Chocolate Cupcakes with Tofutti Cream Cheese Frosting, Individual Seasonal Berry Pies with an easy cream cheese crust, Coconut Tapioca Parfaits with Spiced Pineapple in a jar, and Multigrain Oatmeal Cookies with Cinnamon Drizzle.
